Ingredients
  

  • 1 whole chicken or bone-in pieces
  • 8 cups water
  • 1 onion chopped
  • 3 cloves garlic
  • 2 carrots chopped
  • 2 celery stalks
  • Fresh herbs parsley, thyme
  • Salt and pepper to taste

Equipment

  • Large pot or stockpot
  • Strainer
  • Knife
  • Cutting Board
  • Ladle

Method
 

  1. Add chicken and water to a pot.
  2. Bring to boil, then simmer.
  3. Skim foam from top.
  4. Add vegetables and herbs.
  5. Simmer for 1.5–2 hours.
  6. Remove chicken and strain broth.
  7. Shred chicken and return to soup.
  8. Season and serve.
