Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 carrot diced
  • 1 celery stalk diced
  • 4 cups chicken or vegetable broth
  • 1 can cannellini beans drained
  • 1 cup small pasta
  • ½ cup heavy cream
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup Parmesan cheese
  • Fresh parsley for garnish

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrot, and celery and cook until softened.
  3. Stir in garlic and cook for one minute.
  4. Pour in broth and add beans and seasoning.
  5. Simmer for 10 minutes.
  6. Add pasta and cook until tender.
  7. Stir in heavy cream and Parmesan cheese.
  8. Garnish with parsley and serve warm.

Notes

  1. Blend some beans for a thicker soup texture.
  2. Use vegetable broth for a vegetarian version.
  3. Add pancetta if you want a richer flavor.
