Ingredients
  

  • 2 cups penne pasta
  • 2 chicken breasts diced
  • 1 tablespoon olive oil
  • 3 garlic cloves minced
  • 1 cup chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup mozzarella cheese
  • 1 cup tomato sauce
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup broccoli florets optional
  • Fresh parsley for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until lightly golden.
  3. Add garlic and cook for one minute.
  4. Pour in chicken broth, milk, and tomato sauce.
  5. Add uncooked pasta and stir well.
  6. Cover and cook for 10–12 minutes until pasta is tender.
  7. Stir in cheddar and mozzarella cheese until melted.
  8. Garnish with parsley and serve warm.

Notes

Use freshly shredded cheese for a smoother sauce.
Add broccoli or spinach for extra nutrition.
If the sauce becomes too thick, add a splash of milk.
