Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound smoked sausage sliced
  • 1 pound chicken breast diced
  • 1 onion chopped
  • 1 bell pepper chopped
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup diced tomatoes optional
  • Green onions for garnish

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add sausage and cook until browned, then remove from pot.
  3. Add diced chicken and cook until lightly golden.
  4. Add onion, bell pepper, and celery and cook until soft.
  5. Stir in garlic, rice, and Cajun seasoning.
  6. Pour in chicken broth and add sausage back to the pot.
  7. Cover and simmer for about 20 minutes until rice is tender.
  8. Garnish with green onions and serve hot.
