- Heat olive oil in a large pot over medium heat.
- Add sausage and cook until browned, then remove from pot.
- Add diced chicken and cook until lightly golden.
- Add onion, bell pepper, and celery and cook until soft.
- Stir in garlic, rice, and Cajun seasoning.
- Pour in chicken broth and add sausage back to the pot.
- Cover and simmer for about 20 minutes until rice is tender.
- Garnish with green onions and serve hot.
