Ingredients
  

  • 1 lb fresh asparagus ends trimmed
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic minced
  • 1/2 cup Parmesan cheese freshly grated
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 lemon for juice

Method
 

  1. Prep: Preheat your oven to 425°F (220°C). Line your baking sheet for easy cleanup.
  2. Season: Place asparagus on the sheet. Drizzle with olive oil and add minced garlic, salt, and pepper. Toss until every stalk is coated.
  3. Arrange: Spread the stalks in a single layer, ensuring they are not crowded.
  4. Roast: Bake for 8-10 minutes (depending on thickness).
  5. Cheese: Remove from oven, sprinkle the Parmesan cheese evenly over the stalks, and return to the oven for 2-3 more minutes until cheese is melted and golden.
  6. Finish: Squeeze fresh lemon juice over the top and serve immediately.

Notes

  • Thickness Matters: Thin asparagus will cook in 8 minutes; very thick stalks may need up to 15. Check early to prevent overcooking.
  • Storage: Best enjoyed fresh. Leftovers can be chopped and added to an omelet the next morning.
