Ingredients
  

  • 1.5 lbs chicken breast pounded to even thickness
  • 1/2 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh basil chiffonade
  • Salt and pepper to taste

Equipment

  • Large grill
  • Small mixing bowl
  • Tongs
  • Meat thermometer
  • Grill pan

Method
 

  1. Marinade: Whisk vinegar, oil, garlic, and oregano. Reserve 2 tbsp of the mixture.
  2. Soak: Pour the rest over the chicken and marinate for 30 mins to 2 hours.
  3. Grill: Preheat grill to medium-high. Grill chicken for 6-7 mins per side until internal temp hits 165°F.
  4. Tomatoes: In the last 3 mins, place halved tomatoes on a foil sheet on the grill with the reserved marinade until soft.
  5. Assemble: Top grilled chicken with the blistered tomatoes and a generous sprinkle of fresh basil.
  6. Serve: Rest for 5 mins before slicing.

Notes

  • Oven Method: If no grill, bake at 400°F for 20-25 mins on a sheet pan with the tomatoes.
  • Diabetes Tip: Use a balsamic with no added caramel color or thickeners to keep the sugar content natural and low.
