Ingredients
  

  • 2 large sweet potatoes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup cooked chicken or beans
  • 1 cup cooked rice or quinoa
  • 1 avocado
  • ½ cup cherry tomatoes

Method
 

  1. Preheat oven to 400°F.
  2. Toss diced sweet potatoes with olive oil and spices.
  3. Roast for 20–25 minutes.
  4. Prepare rice or quinoa.
  5. Cook protein of choice.
  6. Assemble bowls with grains, sweet potatoes, and protein.
  7. Add vegetables and sauce before serving.

Notes

  1. Use beans for vegetarian bowls.
  2. Add avocado after reheating for best texture.
  3. Store bowls in fridge up to 4 days.
